DIY birthday ideas: Last week we celebrated the second birthday of our little one,and I wanted to share some ideas here,even if we made the same cake last year and I already shared the recipe,it’s just too delicious to not share again!

The original recipe cake is sugar free which is perfect for young kids,but this year I added these chocolate eggs from Easter in order to create the clouds of the rainbow ?

Health carrot cake recipe

Ingredients:
Ingredients for the cake
1 ripe banana
75g/6 tbsp of coconut oil
120g/1 cup whole wheat flour
2 tsp baking powder
4 tsp cinnamon
2 tsp nutmeg
1 tsp ginger
5 medium carrots (grated)
45g/ 1/2 cup desiccated coconut
a handful of walnuts ( chopped)
a handful of sultanas

How to:

Sift the flour, baking powder and spices into a bowl. Add the banana and the melted coconut oil and mix.
Whisk the eggs with a hand blender and add to the flour. Add the rest of the ingredients and stir until blended.
Bake it for 40-50 minutes until a toothpick comes out clean. Let the cake cool completely.
Icing : mascarpone, banana and whipped cream (whip the mix until thickened)

I always make a birthday crown for them, so this year I upcycled this one from scraps of a floral bedsheet. And I made some cardboard toppers to decorate the table?
